These have been very popular on my Instagram. Many have asked for my recipe. But I wanted to share it with you guys first.
Ingredients (for 6-8 muffins):
1 cup of self-rising flour
A pinch of salt
1 cup of goji berries
2 tsp of melted coconut oil
1 tsp of cinnamon (optional)
1-2 tsp of Maple syrup (optional)
Additional sugar (if you have a sweet tooth)
2 eggs/ flaxseed eggs
1 tsp of vanilla extract
Splash of plant-based milk
How to:
Preheat oven 180Deg Celsius
Mix the dry ingredients first, then add to the wet ingredients (eggs, maple syrup, oil, egg)
Pour the batter into muffin moulds
Bake for 15-20min until the muffins are golden
Let them cool and dive in!
