The banana bake

This is the perfect cheat for one on that late morning! It is definitely one of my best hang over cure and so easy to make.


Ingredients (for 1 bowl):

1 ripe banana

1 egg/flax egg

2 tsp of desiccated coconut 

2 tbsp of self-rising flour 

A pinch of salt

2 tsp of sugar replacement 

Maple syrup to drizzle on top 

Topping of your choice. I have banana slices, berries, seeds, cocoa nibs and fig jam

For extra taste you throw on some chocolate chips, but I always use dark chocolate to make it tasty, nutritious and healthy


How to:

  1. Pre-heat oven to 180deg Celsius 

  2. Smash half of a banana into a puree and mix all ingredients well. Add everything together and pour the batter into an oven-safe bowl

  3. Lay berries and slices of banana on top. 

  4. Bake for 20-30 minutes or until golden. I always stare excitedly at the oven!
